A Taste of Sweden When booking the IceHotel, we made our eating reservations as well. The IceHotel restaurant was our first night’s cuisine. Reindeer, moose, char, cloudberries… all traditional locally sourced fare and delicious. Though the Northern Lights installation art on the ceiling was lovely, the dining area has all the charm of eating in an airport lounge. I wish there was a bit more beauty in the space to enjoy the dinner and more indicative of the hotel and region. We happened to meet Marjolein Vonk at breakfast, who designed the bathrooms in the Deluxe Art Suites and the Veranda restaurant next door, and think it would be wonderful if they tapped her to revamp the restaurant. The IceHotel is famous for it’s artistically designed suites and it’s a shame that it’s restaurant doesn’t thrill the same way. The next night we had a wilderness dinner, with a private chef that prepares food while serving paired wines in a cabin in the woods beside a frozen lake (on top of which we sat to enjoy the Northern Lights while she made dessert). The food was similar, but the experience much more beautiful.
